The HH made this {crazy delicious!} cold green bean salad with cashews and bacon a few weeks ago when we were knee deep in fresh green beans. I don’t know about you, but I could eat a salad every day for lunch and never get tired of salads. I also love bacon and cashews. ๐
This salad has a nice crunch and is the perfect blend of sweet and savory. Unique enough for potlucks, bbq’s, holiday dinners and this salad would be great for those of you who love to meal prep. Plus, this green bean salad will stay nice several days in the fridge.

Ingredients
2 pounds fresh green beans, chopped
1 pound bacon, cooked and crumbled
1 cup mayonnaise
2 teaspoons apple cider vinegar
1/2 cup granulated sugar
1 cup roasted cashews
1/4 cup red onion, diced
1/4 cup Crasins {optional}
Directions
Cut the ends off the beans and chop them into bite-sized pieces and blanch them. Once you have blanched the beans, set them in a bowl of ice water to cool for 5 minutes before draining. In a large mixing bowl, whisk mayonnaise, vinegar, and sugar until fully incorporated. Stir in the beans, bacon, cashews and Crasins if you are using them. Toss until well coated. Chill at least 2 hours before serving.

That salad looks amazing. However, for some of us, that’s a lot of sugar. When I make that type of dressing I substitute the apple cider vinegar for Nakano seasoned rice vinegar. It’s sweet enough you don’t need any sugar at all. And Nakano is great for a green salad dressing all by itself. 15 calories per T for those counting.

Apple Cider vinegar, (I use Braggs) is actually good for you. I drink a Tablespoon Apple. Idea. Inevad, a Tablespoon of honey, (raw is best) in a glass of water. I love the taste. Insted of sugar, you can use stevia or another sugar alternative. Iโve .earned to do this as the hubs is diabetic.

Hi Mavis, the salad looks terrific. I’d just like to confirm one of the recipe ingredients– the recipe states that you used a full cup of mayo, but even with 2 lbs of green beans it doesn’t appear that there is a full cup of mayo on it, portioned in the photo. (A full cup of mayo is an awful lot.) Just checking…?
