Looking for a quick and scrumptious recipe for all those green beans you’ll be harvesting out of you garden any day now? This recipe for green beans with lemon and herbs is about as easy as it gets.
Ingredients
1 pound fresh green Beans, trimmed and blanched
2 green onions, chopped
1 tablespoon olive oil {my favorite brand is Zoe Olive Oil}
1 tablespoon lemon juice
1 teaspoon lemon zest
½ tsp fresh thyme, minced
salt and pepper to taste
Directions
Blanch green beans in a pot of boiling water and set aside.
Place olive oil in a hot skillet and saute the green onions for 1 minute, add green beans and cook 2 more minutes, stirring constantly. Add lemon juice and thyme and cook for 1 more minute.

Remove from heat and lemon zest and season with salt and pepper, serve warm.
