I’m sure you’ve noticed all the deals on asparagus in the stores lately, and I’m not sure how you prepare asparagus, but my family likes their little greens trees grilled. If it’s a wee bit chilly at your place to fire up the barbie, you can also grill these bad boys in the oven.
Ingredients
1 pound asparagus, trimmed
1/3 cup toasted pine nuts
1 tablespoon olive oil
salt and pepper to taste
Directions
Fire up the bbq to medium heat or the oven to 425 degrees. Place the asparagus on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper, give it a shake and cook for 7-10 minutes in the oven or place the asparagus in a grill pan and cook on the bbq until tender {about 5 minutes}.
Place the asparagus on a plate and sprinkle with toasted pine nuts.

I get to eat mine this coming spring too. I blanch it, cook in stir fry’s, grill or pan grill or add to salads. I also make and freeze asparagus rolls which are wonderful for ‘take a plate’ occasions. All ways are wonderful
I freeze them too, just bend the lower stem until it snaps to get rid of the pithy end, then lay out on freezer paper in single layers and pop in freezer. Next day bag them up and you have free flow asparagus.
I love it with salmon done in individual parcels. Slice a lemon and put in the middle of a piece of tinfoil, sit salmon on top, season with lemon pepper (no salt) another lemon slice or two, several asparagus spears and a knob of butter. Wrap up securely and pop in a moderate oven for about 15-20 minutes. Be careful how you lift these out they are full of steam. Carefully roll back the foil and serve either on foil or plate up. This also works on a BBQ for all fish, but salmon and asparagus are made for each other.
Asparagus is also very good for urinary and bladder infections.

You are freezing some without blanching first? (2nd par.)?

Yes I am. I used to blanch it, then tried peeling the woody ends, but now I just rinse and freeze. Have done it this way for several years now. As long as you bag it up quickly it seems to work fine.
