I had some leftover ham I wanted to use up, and this recipe seemed like the perfect solution. It’s like an all-in-one breakfast home run. We all enjoyed it, and I like that it starts your day out with a little kick of veggies! Plus, you do all the work the night before, so when you’re rubbing sleep from your eyes, all you have to do is throw this in the oven and BAM, breakfast is served.
6 slices of French bread, cut into bite size pieces
2 cups broccoli florets
2 cups ham, diced
2 cups {8 oz} cheddar cheese {I used sharp}
12 eggs
1 cup milk
1 teaspoon paprika
1/4 teaspoon crushed red pepper
Salt and pepper to taste
Butter a 9×13 baking dish and set aside.
In a large mixing bowl, toss bread, broccoli, ham and a 3/4 cup of the cheese together. Pour into the prepared baking dish. Next, whisk eggs, milk, paprika, crushed red pepper and salt and pepper to taste. Pour egg mixture over bread mixture. Cover with foil and refrigerate overnight.
When ready to bake, preheat oven to 375 F. Remove foil and sprinkle with remaining cheese. Recover with foil and bake for about 45 minutes. Remove foil and continue baking for 15 more minutes, or until golden brown on top. Enjoy.
