I don’t know about you, but I’m pretty much in LOVE with quiche. These days I make a quiche about once a month, and every time I do I wonder why I’m not making them more often. 12 quiche in a year? It’s simply not enough. Quiche can be served for breakfast, lunch or dinner and better yet, you can freeze the leftovers. Really, what’s not to love? And, quiche is a pretty healthy meal to boot!
For the Butter Crust
- 2 cups all purpose flour
- 1/2 cup cold butter cut up into tiny cubes
- 1 teaspoon salt
- 5-7 tablespoons of cold water
- 1 teaspoon white vinegar
For the Quiche
- 1 cup ham cut into 1 inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 teaspoon garlic
- 8 eggs
- 1/2 cup milk
- 1/2 cup frozen spinach, chopped
- 1/2 cup cheese, shredded {I used pepper jack but cheddar is a great alternative}
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Directions
Combine pie crust ingredients together, roll into a ball, use the palm of your hand to flatten crust to about 1 inch. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour. Roll out pie crust, line a 9″ pie plate with it making sure to have a nice fat crust.
Pre-heat the oven to 375 degrees
To a skillet add olive oil, onion and carrots and cook until tender over medium heat. Add ham and garlic and saute for a minute or two longer. Take pan off heat and let the mixture cool down.
In a large bowl, whisk the eggs, milk, spinach and spices together.
Remove the prepare pie crust from the fridge and line the bottom of the crust with vegetable and ham mixture. Pour egg mixture over vegetables and ham, sprinkle with cheese. Using a pastry brush, apply a light egg wash to the crust. Bake 40-50 minutes or until a knife inserted near the center comes out clean. Cool slightly, and serve.

My favorite way to get butter small enough into the dough is to grate the cold stick on a cheese box grater. Easy peasy and you get tiny flecks of butter mixed into the dough perfectly. I love quiche!

Based on your suggestion, we stopped at Lil’s Cafe for lunch yesterday. I had the delish soup and of course, a nice cuppa/potta tea. When we go to ME we usually don’t take local roads so it was nice to do the bypass. That part of Kittery is so different from the outlet strip.
Kids loved the name of the juice shop next door.

That looks delicious! Thanks for the reminder, I haven’t made quiche in awhile and my one hen is laying pretty well in spite of her trauma. The neighbors dog ate all my other chickens. I blogged about it but I don’t want to tell it again as it breaks my heart a bit.

Love quiche- I’ll have to try your recipe. The recipes I have always used have less eggs, cream or 1/2 and 12, and three times the cheese. I add Swiss cheese in mine too.

Love quiche. I try to make one with whatever veggie is in season. Favorites are asparagus, zucchini, broccoli, Swiss chard, spinach…guess we just love quiche. They are so adaptable to using whatever cheeses you have on hand. We prefer crustless ones that use a small amount of Bisquick in the filling. But plan to try yours as soon as spinach is in the garden.

I can’t eat wheat so I don’t make quiche. I’ve thought about trying alternative crusts (potato, gluten free, etc), but in the end, I’ve decided that a frittata is easier, and just as delicious. Well, not as much butter but you can get past that by adding more cheese.

Your hair would look pretty in a braid. Another product to try is infusium. It is a spray and works so nicely with tangles and adds a healthy shine to hair. Usually get it on sale with a coupon!

For the crust….pulse the butter, flour, and salt in the food processor, then add the liquid and pulse till it comes together. Easy-peasy and quick!
Others mentioned your hair….I wonder if the wood stove is affecting it? When we camp….and sit around the campfire….the smoke or something about it affects my hair. I’m shampoo-free…and the natural oils of my hair + smoke do weird things! You’ve changed climates, too, from a very humid area to a drier area + a drier heat.
