Sometimes looks can be deceiving. It looks like a waffle, but it sure as Sam doesn’t taste like a normal waffle. It’s probably the coolest way to serve hash browns I’ve ever seen. Your kids will probably think you’re the most inventive breakfast maker ever. Because when you cook these bad boys up, you are!
1 pound potatoes, shredded
2 tablespoons vegetable oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
Preheat waffle iron and then coat the cooking surface with butter.
In a large bowl, cover potatoes with enough cold water to cover them, and then let them soak for 3-5 minutes. Drain and rinse them, and then press them between paper towels to squeeze out water.
Add oil, garlic, salt and pepper to the bowl and toss with potatoes until evenly covered. Lightly beat the eggs and then pour them over the potato mixture.
Carefully spread half the potato mixture into the waffle iron. Cook 6-8 minutes or until golden brown. Repeat a second time. Serve hot and enjoy!

I think these would be great for topping with a loosely fried egg… little yolk puddles in the waffle sections. Yum! I guess to make it better you could top it with bacon too. Thanks for the fun idea!

Tried these tonight. Very tasty. I agree with Veronica that the fried egg on top would be a good addition. Also, other potato fixins could be good spread on top, such as sour cream, yogurt, green onions, etc.

Thanks for re-posting this this week! My mom gifted me a mostly-full bag of frozen shredded hashed browns, and we were making waffles this morning, so… We made 1/2 recipe since there were only a few who would try it (weird non-potato person in my family, but I suppose we’re related – maybe I should ask for a DNA test – but wait, I remember giving birth to her, but maybe they switched her??). ANYWAY. The breakfast-eating people in my family who will eat potatoes (one daughter and myself) LOVED these. They smelled DIVINE, and SO easy ๐ We’ll be using the rest of the bag again soon ๐
