Last night I made a batch of cherry chocolate chip ice cream and used my favorite vanilla ice cream recipe as a base. Not only did I have ice cream for dessert, but I also had it for breakfast this morning as well.
I mean, it has fruit in it right? Plus milk and eggs, so that’s like totally healthy. Right?
C’mon, you know it is. Ice cream is the breakfast of champions!
Ingredients
6 fresh egg yolks
2 cups milk {I used 2%}
4 cups heavy whipping cream
1 cup sugar
seeds of 1 vanilla bean
Add Ins
1 cup sweet cherries, stemmed, pitted and chopped
3/4 cup chocolate chips {I used semi-sweet}
Directions
Combine egg yolks, sugar and vanilla seeds in a mixing bowl. Add milk.
Heat mixture in a double broiler until it coats the back of spoon {about 5-7 minutes}.
Place the mixture in the refrigerator to cool down {about 2 hours}.
Remove the mixture from the refrigerator, add gently stir in whipping cream just until combined.
Pour into ice cream maker and follow manufacturer’s instructions. During the last few minutes of churning, fold in the cherries and chocolate chips.
