I am all about quick and easy breakfasts on the go. I like to make most everything when I’m motivated {which I can assure you is NEVER at breakfast time}, and then it’s ready when the HH or the kids need it. The HH loves this particular granola recipe for a quick breakfast or snack, so I find myself making it quite often.
Ingredients
2 cups rolled oats
1 cup sliced almonds
1 cup shredded, unsweetened coconut
1/3 cup wheat germ
1/3 cup honey
1/3 cup brown sugar
1 ½ tsp vanilla extract
1/4 tsp salt
Preheat oven to 350 degrees. Line a cookie sheet with a silpat {you can use parchment paper too}. Lay the oats, almonds, and coconut out flat on the pan and bake for 10-15 minutes until the coconut is golden brown. Remove pan from oven and allow to sit while you mix remaining ingredients in a large bowl. Add almonds, oats and coconut to the bowl and stir well.
Reduce the oven temperature to 300 degrees and put the mixture back onto the cookie sheet, spreading mixture out evenly. Bake for 20-30 minutes, stirring every 5-7 minutes. Granola is done when it is a golden brown color. Allow to cool then break into manageable bits and store in an airtight container.
