Deals on asparagus are popping up like crazy this time of year and we just can’t stop eating it. The thing is though, asparagus is kind of a treat around here, so when I get a bunch, I like to use it in as many dishes as possible to make it go a little further.
Last year I learned a cool trick to making asparagus last a little longer.
The next time you purchase asparagus and are not able to use it right away, trim about an inch off the bottoms of the asparagus, then place the asparagus in quart sized canning jar {an old spaghetti jar works great too} with about 2 inches of cold water.
The cover the asparagus loosely with a plastic produce bag and pop it in the refrigerator. The stalks should stay crisp for a week or longer.
Neat trick, huh?

Do you grow asparagus? I’d think it’d do well in Washington. It’s the only thing I’ve been able to harvest yet here in Minnesota, and we’ve been eating it daily! I started it from seed a few years ago. Then, it lived in a pot at my house in town for a year. When I moved that winter to an apartment, I moved the pot to my parents’ garage. The following Spring I transplanted it outside on their property. Right now, it’s multiplying like crazy, which is so neat! It is so easy and abundant and asparagus (at least here) is so expensive…I have 5 bunches of it (I think I’ll spread it out more evenly in the Spring) in a space about 4’x4′ and am not harvesting some of it (I only harvest ones bigger around than a pencil) and I’ve still had almost 3 pounds so far this year. Not bad for an early bed started from seed by a total amateur…

This is totally off topic. I’ve not been able to read your blog since Friday, May 3rd.
I usually read it on my phone. Suddenly, nothing! I thought maybe you were taking a vacation from the blog. Seriously, I was going through Mavis and Lucy withdrawal. On a whim, I pulled the blog up on my computer and Yee Haw! A half of month to catch up on. Will now have to troubleshoot my phone and see what is up. So glad I’m just behind and that all is well.
