Another day, another delish Instant Pot recipe from Amberlina. That girl is OBSESSED with her Instant Pot. I’m thinking of scheduling an intervention…or buying an Instant Pot myself, because look at that chicken!! She said she combined 3 different recipes and then adapted a few additional things until she found the perfect recipe. My mouth is watering. Here’s her recipe:
Ingredients
2 pounds boneless, skinless chicken thighs {or breasts}
Salt and pepper
1/2 cup onion, finely diced
3/4 cup honey
1/4 cup ketchup
1/4 cup water
1/2 cup soy sauce
2 tablespoons vegetable oil
2 teaspoons minced garlic
1/2 teaspoon red pepper flakes
2 tablespoons cornstarch
1 tablespoon water
Directions
Season chicken thighs with salt and pepper and set aside. Mix all ingredients {except the cornstarch and water} in the bottom of the pot.ย Place chicken thighs on top. Set the IP on manual for 15 minutes on high pressure. When the timer beeps, let it naturally release pressure for 5 minutes before manually releasing remaining pressure after that.
Release lid when pin drops, remove chicken and shred or chop. Press the saute button on the IP. In a small bowl, stir the cornstarch and water together and then add it to the remaining sauce. Saute for 3 minutes, stirring to thicken. You can put the meat back into the sauce if you want it really saucy, or serve the sauce on the side so people can pour their desired amount on the chicken. My daughters put some meat on a hamburger bun like a pulled pork sandwich, but my husband and I went carb-free like the picture above. It’s so versatile! Enjoy!
*NOTE: I chopped 5 large red potatoes and steamed them in with the meat in a raised steamer bowl above the chicken. They just cook for the same amount of time. I removed them and added a little garlic salt and pepper. The honey bourbon flavors the potatoes as well.

The recipe is actually called Bourbon Chicken after Bourbon Street, not because of the liquor. So it doesn’t call for any, but when my husband is cooking it, he throws in a splash of bourbon because he says it’s necessary. Ha!

Actually I think it’s $70 and the rice cooker is $30 at Costco. Can you make rice in an Instapot?

You can make rice in an instantpot. It takes 3 min at high pressure with a 10 min NPR (natural pressure release).

We have the 6 quart Instant Pot. Got it from Amazon. They have an 8 quart too. There are lots of these types of cookers on the market. We’ve been very happy with the IP… there are fons of Instant Pot videos on YouTube (‘Pressure Luck’ is my fav!) and if you’re on Facebook there are several IP groups that share recipes and tips. I have an “Instant Pot IP-DUO60 7-in-1 Multi-Functional Pressure Cooker, 6Qt/1000W” and it’s AMAZING. It’s the brand that I see most recommended. Mine is a few years old and don’t have the yogurt button on it (which I’m sad about) so I may have to buy me a new one ๐
Brown rice; bean (from dried to refried in under 30 min total); mac n cheese and chili are what we make most. I want to try a cheese cake but I need the 6″ spring form pan first.

I have the Fagor multi function (pressure cooker, slow cooker, rice cooker, etc) and it is fantastic. This year several cooking review groups have ranked it about Instant Pot. Mine came with a non-stick pot which works great but I did purchase a solid stainless steel version directly through the company too.

I just made the recipe using frozen chicken breasts and I am beyond impressed! I added some ginger paste and apple juice and didnโt use the full amount of honey. Rice is cooking on the stove right now. Canโt wait to dig in!
