Amberlina is at it again. This time, she made a quick and easy meatloaf with her Instant Pot {which I am convinced she now loves more than her children}. She made the meatloaf and the potatoes all together and they cooked speedy quick. Here’s what she had to say about the recipe:
You guys, my kids HATE meatloaf. Like hate it. I’m not a fan either, but a few IP friends promised this meatloaf was the bee’s knees. It was. Everyone asked for seconds, even the kids. We are now meatloaf lovers, but only if it’s this recipe. And cooking the potatoes and meatloaf at the same time was awesome. I just threw some green beans with it and had a simple-to-make, well-rounded meal the whole fam loved!
Ingredients
1 lb hamburger
2 tsps crushed garlic
2 eggs
3/4 cups panko crumbs {regular or Italian seasoned ones work great, too}
1/2 heaping cup grated parmesan cheese
1 tsp seasoning salt
Salt & pepper to taste
1/2 cup beef broth
1/2 cup water
For sauce:
2/3 cup ketchup
5 tbsp brown sugar
2 tsp worcestershire sauce
1 tbsp dry mustard
Directions
Combine 1st 7 ingredients and mix by hand {you can put on gloves if touching raw meat makes you cringe}. Lay out a sheet of aluminum foil and shape into a loaf. Spread 1/2 the sauce mixture on top and fold up sides of foil.
Pour the water and beef broth into the IP pot. Place loaf on silicone steamer basket and place desired amounts of washed red potatoes around it. You can pile them 2 deep if youd like. They’ll cook fine. Cook on manual for 25 minutes and let NPR for 15 minutes and then release remainging pressure.
Place meatloaf on baking sheet and spread another layer of sauce on top; broil for 5 min to caramelize. Slice ans serve. You can brush each slice with any remaining sauce if desired. Smash red potatoes with a potato masher or fork, butter and salt and pepper to taste. Enjoy!
