I know those store bought fish sticks are a staple in many American kitchens. I get it. They are fast and easy, and kids gobble them up. But if you read some of those labels, the contents will shock you. Not the best thing to be feeding small bellies {or any sized bellies for that matter!}. So here is a healthier version that kids will still love!
Ingredients
1 cup bread crumbs {you could use seasoned for an extra kick!}
1 teaspoon salt
1 teaspoon paprika
1 teaspoon lemon pepper seasoning
1 cup flour
2 eggs, lightly beaten
1.5 pounds cod fillets, cut into strips
Directions
Preheat oven to 400F. Mix bread crumbs, salt, paprika and lemon pepper, and pour onto a large plate {plates with raised edges or lips woke best}. Place flour and egg in separate shallow bowls. Make a fish stick assembly line, placing the flour plate first, followed by the egg bowl, the bread crumb bowl and a baking sheet {coated with cooking spray}. Dip the fish first in the flour, then the egg and then the break crumb mixture, pressing the fish into the coating to help it stick. Carefully place now coated fish sticks on a baking sheet and bake for about 12 minutes, turning once. Fish sticks are done when the fish flakes when cut. Enjoy!

This looks like something our family would enjoy. My daughter (almost 6) isn’t picky though, she ate sardines for her bedtime snack tonight. LOL

Do you think these could be made with frozen cod? We have a Sam’s membership (not Costco) and we get the frozen bag of cod. My 14 year old daughter LOVES fish sticks though. Do you think these could be made from the thawed cod and then refrozen??

I made mine with thawed cod from Costco. I did not re-freeze them though.
