I know most people think turkey when they think Thanksgiving leftovers. But I know so many families that serve ham for Thanksgiving as well. Here is a simple breakfast idea to use up any leftover ham you might have. It’s a simple recipe too, so you won’t feel like it’s too much of a chore after spending so many hours in the kitchen this week!
Ingredients
8 eggs
1/4 cup milk {I used 2%}
1 teaspoon garlic powder
Salt and pepper to taste
1 cup leftover ham, cubed
1 tablespoon butter
2 cups chopped, fresh spinach
1 cup shredded cheese of choice {I used cheddar}
In a large bowl, whisk the eggs, milk, garlic powder and salt and pepper, then stir in the ham. In a large skillet over medium-high heat, melt butter and saute spinach and ham until ham is heated through.
Add egg mixture and cook while stirring until almost set. Stir in cheese and cook until completely set

ha! this is what we had 2 nights ago! i bought 2 hams (2 for 1–$19.00) at albertsons with a $25 gift card (received for getting a new prescription). made a ham meal in the crock pot; used most of remainder for ham and bean soup 2 nights later. (would have been great had i night dumped–oops!–too much pepper in–when DH says “too much pepper”, i know it’s way too much!) used the last bit in scrambled eggs meal last week. still have the other ham to make some quiches for work (my turn next month to bring breakfast) and then do something else with……
