Here’s another totally delicious recipe if you’re standing there staring at all that leftover turkey wondering what to do with it. I know turkey in an enchilada might seem a little out there, but holy cats it’s good!
You won’t even realize you’re eating leftover turkey, which is probably great because if you’re anything like me, you don’t want to even look at turkey anything right now. I ate so much of it, it hurt!
Ingredients
2 cups shredded or coarsely chopped turkey {can sub chicken if you want}
1 cup corn {I used frozen and thawed it first}
1 bell pepper, diced
1 1/2 cups cheese, grated
1/2 teaspoon salt
1/2 teaspoon pepper
8 small flour tortillas
1 cup enchilada sauce
1/4 cup chopped cilantro {optional}
Directions
Preheat oven to 400F. In a mixing bowl, combine the turkey, corn, 1 cup of cheese, and salt and pepper.
Evenly fill the tortillas with the turkey mixture, roll and place seam-side down in a 9×13 baking dish. Cover with sauce and remaining cheese. Bake 15 to 20 minutes or until starting to slightly brown. Sprinkle with the cilantro and enjoy.

Turkey makes a GREAT enchilada! Instead of wrapping them in tortillas, I like to stuff them in peppers, too.

Turkey enchiladas are one of my families favorites. Before Thanksgiving even hit they were asking if we’d be having them soon. I divided up the turkey last night for enchiladas, turkey pot pies (recipe from your chicken pot pies), turkey tetrazzini and sandwiches.
I like the addition of corn in your enchilada recipe so I will give that a whirl:) Hope you had a wonderful Thanksgiving.

You can also use a green chile sauce instead of red, just mix with sour cream. Very tasty with turkey!

Oh, I wish we still had leftover turkey to try these!
I hunted all over to find the biggest turkey hoping that 21lbs. would allow for lots of leftovers. However, after feeding 20 people all I had left was a small ziploc baggie full! Guess I’ll have to buy 2 turkeys next year!
