So you bake this big ham and then what? You’re stuck with all these ham leftovers to use up. So I’m always experimenting with leftover ham recipes.
Ding Ding Ding… We have a winner! It’s cheesy and salty and melt in your mouth delicious. We’re going to ignore calories tonight because, holy cow man, this casserole is good!
Ingredients
4 medium potatoes, diced {about 2 pounds}
3 cups leftover ham, diced
4 slices cooked bacon, crumbled
1 1/2 cups shredded cheddar cheese, plus 1/2 cup for topping
4 green onions, sliced thin
Salt and pepper to taste
1/2 cup heavy cream
2 tablespoons butter, diced
Directions
Heat oven to 350 F. Spray a 9×9 casserole dish with cooking spray and set aside.
Divide the potatoes, bacon, 1 1/2 cups cheese and green onions in half. Spread half of the potatoes in the bottom of the prepared pan and season with salt and pepper. Cover with diced ham, and then sprinkle with half the bacon, cheese and onions.
Add remaining potatoes, and then top with the other half of the bacon, cheese, and green onions. Salt and pepper to taste. Pour heavy cream over the top and then drop butter cubes evenly. Cover with aluminum foil and bake for 1 hour. Remove foil and bake for an additional 25 minutes. Remove from oven, sprinkle with reserved cheese and bake for an additional 5 minutes or until cheese is melted and bubbly. Enjoy.

In the States, when you serve a baked potato “loaded” it usually means covered with cheese, sour cream, bacon, chives. So this casserole is “loaded” with similar ingredients. 🙂

Hi Mavis! Or should I say Mrs. Butterfield? Anywhooo, I was wondering if I could use grocery store hash browns instead of fresh potatoes, if I thawed the hash browns first? And still get the same great results in the finished product.

I have never tried it that way, but I think if the hash browns were drained first it would be okay
