Tis the season. Pretty soon we’re going to see sweet potatoes popping up everywhere. Most grocery stores will start running sales and soon Costco will be selling them in a 10 pound bag. So since we’re going to have a lot of sweet potatoes at our finger tips, I figured I better start scrounging up some good recipes. And this is a good recipe!
Ingredients
4 large sweet potatoes
1 1/2 tablespoons butter
2 tablespoons milk
1/4 teaspoon salt
1/4 cup toasted pecans, chopped
Directions
Wash each sweet potato and then using a fork or knife, puncture a few times before wrapping in a damp paper towel. Microwave on high 8 minutes or until soft. Chop in half and scoop flesh out into a bowl. Mash thoroughly.
In a small saucepan, brown butter for 3 minutes over medium heat. Stir browned butter, milk, and salt into potatoes. Top with pecans. You can also drizzle warm maple syrup over the mashed potatoes to sweeten it up a bit. Enjoy!
