Yesterday I harvested the last of the winter squash. There were a few butternuts, Burgess buttercups, and spaghetti squash to pick.
Out of all of the squash I grew this year, I am most excited to try the Burgess buttercup squash. Since my sweet potatoes were a total dud, I am totally taking the Botanical Interests seed packet for it’s word when it says “May be used as a substitute for mashed sweet potatoes.” We’ll see. If I can fool the Handsome Husband with this, then I’ll forget about planting sweet potatoes next year, and plant more Burgess Buttercup instead as I think the squash may be easier to grow in Washington State.
All in all, not a bad haul. I think combined with all the other squash we grew this year, we should be set. Let’s hope for a long, cold winter, so I can use up all this squash.

I think you could feed the world on squash alone! And it grows anywhere. I have an area in front of my house that is concrete with 4″ of bad soil on top of it. The flowers died, the lettuce died, the onions died, the strawberries died, the soapwort died. The spaghetti squash gave me 4 large squash each 🙂

Oooh, I have some of the Buttercup squash as well. Never have tried it. Can’t wait.

My neighbor grew this squash and she was harvesting it super young. We would grill or saute it up like a zucchini but I just realized (while searching for seeds to try next year) that this should be grown longer until it’s hard. She still has more growing and we’re going to try it in a couple weeks.

Yes, it has a flavor similar to sweet potatoes. I actually like it better then sweet potatoes and I’m not much of a squash person, so this has to be saying a lot for it!

I grew this squash by accident in a winter squash blend seed pack and had no idea what it was. Now I can’t wait to try it! I have a garage full of winter squash and freezer/ pantry (dehydrated) full of summer squash and my oldest has now sworn off ALL squash completely!
