After I discovered my broccoli raab had bolted while we were away, I had to pull it up and plant something else in it’s place.
Luckily I have a bunch of seedlings growing in the greenhouse and indoors. Since it’s still a wee bit chilly out, I thought Chinese cabbage seemed like a good fit for the space. Even though we have 16 raised garden beds, I am trying to hold off on planting the rest of them for now. It’s hard, but I want to be able to maximize the space by planting a boatload of tomatoes, cucumbers and beans in the beds. If I fill them up with more cold weather crops now, I won’t have room when I set out the warmer crops in about another 3 weeks or so.
It’s a tough call, but I think it’s the right one for now.
Now, I suppose the question is, what am I going to do with all this Chinese cabbage when it’s ready to harvest? Ha! I guess I’ll have to cross that bridge when we get to it.

Becaues cabbage is int he brassica family, I like to plant them in pots and put them around the garden. This way they don’t take up too much space during peak growing season and I dont have to worry about crop rotation the following year.

So many possibilities…Kim chee, stir fry,steamed and served hot or cold with a ginger soy, peanut sauce or sesame dressing , sautee with some garlic, sesame oil and a little salt and serve as a side or add it to a chinese chicken salad! Yum! There’s also Shabu Shabu which is like a japanese version of fondue but you’re cooking in a broth instead of cheese :)…..we always use chinese cabbage, thinly sliced beef, chicken or pork,variety of mushrooms, green onions, etc then dip in a ponzu sauce or a sesame sauce. It’s a fun thing to do! There is a special shabu pot that you can buy but we just use an electric skillet and it works great! : ) Now I wish I had planted some chinese cabbage! : (

Frozen coleslaw. Then freeze in small meal size freezer bags or containers.

Kimchi! Best way to preserve an overabundance of greens like bok choy or napa cabbage, though my personal favorite also uses radishes and green onions. Korean cookbooks will have numerous recipe ideas.
