I think you guys are going to be a little surprised this Wednesday when I announce how many vegetables I was able to harvest this past week. I don’t know if it’s because we had such a long {and wet} spring, but all the cold weather crops are growing like nuts this year. I can barely keep up. In fact, I’m thinking about opening a little farm stand at the end of my driveway tonight to see if I can unload some of the extra veggies.
But for now, I need a little help.
This afternoon I harvested my very first head of cauliflower. But I don’t know what to do with it. Besides steaming it, the only other cauliflower dish I’ve made before was cauliflower hummus. And it was really good, but this time I want to make something different.
Do you have any ideas?
Can you roast cauliflower?
Please help!

You can roast it, drizzle it with olive oil and season with salt and pepper. I like it grilled too. Also you can make “Fake mashed potatoes” I could eat cauliflower all day long!

ROAST IT! I’ve had so many people say they hate cauliflower but then I’ll roast it with garlic and spices. Don’t over-cook it though. It’s best brown but still a little bite to it.

Cauliflower “mashed potatoes”, roasted cauliflower poppers (it’s actually a weight watchers recipe!), and my mom lightly steams then bakes a whole head smothered in Dijon, mayo, onion flakes, pinch of garlic and cheddar cheese… It is awesome!

Definitely roasted. Olive oil, salt, pepper and fresh sage!!
Its delicious. Watch it though and toss a couple times, it browns quickly in the end. 🙂

Curry roasted cauliflower is one of my favorites. Just cut it up into chunks, toss with a little oil, put some curry powder over it, and then roast in the oven. Awesomeness in veggie form.

Roast it! I never liked cauliflower growing up boiled etc, it was awful. Then last year I was at my favorite produce market and cauliflower was .29 a head, well for .29 cents I said why not. I roast just about every other veggie so I sliced it on the thin side tossed it with olive oil, salt and pepper in a 400 degree oven. Oh my is it good, cook until it is nice and caramelized on one side. My daughter and I fight over it and there are never never any leftovers no matter how much I make!

I was like you once. I had no idea what to do with cauliflower until I bought a cookbook by Ree Drummond. I used her cauliflower soup recipe but modified it for my crockpot. Its nothing less than amazing.
Toss in a large crock:
4 Tbsp Butter
8 C Chicken Broth
3/4 C Celery, diced
3/4 C Carrots, diced
1 head Cauliflower, cored & rough chopped
2 tsp dried parsley – use more if fresh
Crock 4 1/2 hours and then in a saucepan on your stove:
Melt 4 Tbsp Butter
Whisk in 6 Tbsp Flour, cook 3 minutes
Add 2 C Milk, remove from heat
Add 1 C Half & Half, pour into crock
Add 1 tsp each of Salt & Pepper
Crock for another 20-30 minutes.
Place 1 Tbsp sour cream in bottom of bowls, ladle soup over.
My daughter can’t have sour cream so I’ve had it with & without…. not a big diff to me.
Seriously. Try this. Now. GO.

Ok, I have made Ree’s cauliflower soup and love it. Now it’s even better. I can make it in my crock pot!!! (I have 3 crock pots & love each and every one of them.)
Also Mavis, saute the cauliflower in butter, mash, season & add to your mashed potatoes. I do not like cauliflower or mashed potatoes. But the whole family fights over the cauliflower mashed potatoes. They are yummy!!

I really like Loaded Cauliflower. You steam the cauliflower then mash it like mashed potaoes… then add salt & pepper, butter, sour cream, bacon bits, green onions, cheddar cheese… basically everything you would add to a loaded baked potato. Put it in a casserole dish and bake until the cheese melts. It’s really tasty! 🙂

I used a cauliflower to make a gluten-free pizza crust. It turned out really well in the spots where I had made the crust really, really thin. Where I left it a bit thick the cauliflower flavor came through really strongly. (I’m not a cauliflower fan, so I didn’t care too much for it in the thick parts!) I found the recipe on Pinterest. It was super easy to follow and didn’t take long to put together.

LOVE it roasted, but we also throw it in the food processor to make ‘rice’ for jambalaya. If my hubby and crazy picky toddler will eat it as ‘rice’, I’m sure your family would like it.

Definitely make Aloo Gobi (Indian dish with potatoes and cauliflower.) It’s a huge hit with me and my kids. It’s a great way to use up leftover baked potatoes, too.

I have a Cauliflower Au Gratin recipe that is a good. You do have to bake it, which isn’t great when the temperatures are on the rise. I could eat this as a main course. Let me know if you would like the recipe.
