In an effort to revitalize our leftover ham from Easter dinner, I made my favorite Split Pea Soup recipe. It’s a hearty stand-alone recipe that I could have served to my family and then would have been perfectly content gobbling it up. But I thought it needed a tasty little side to go with it, so I whipped up these rolls. They are as simple as they come, but they don’t taste simple when you bite into them. Yumm-O.
Ingredients
2 cups all-purpose flour
1 envelope rapid rise yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
4 tablespoons butter
Directions
In a large mixing bowl, combine 3/4 cup flour, yeast, sugar and salt and set aside. In a microwave safe bowl, combine milk, water and 2 tablespoons butter and microwave until very warm, between 120 degrees and 130 degrees. In stand mixer with paddle attachment, beat in flour mixture at medium speed for 2 minutes, scraping down sides as needed.
Add 1/4 cup flour and beat for another 2 minutes at high speed. Stir in remaining flour {add additional flour if dough is sticky and not soft}. Pour onto a lightly floured surface and knead until smooth for about 10 minutes {or use paddle attachment to do this in the bowl}. Cover and let sit for 10 minutes.
Shape dough into 12 equal balls. Place dough balls in a greased 8-inch round pan. Cover and let rise in warm area until dough is doubled in size {about 30 minutes}.
Bake at 375F for 20 minutes or until tops are golden. Place on a cooling rack, brush with remaining melted butter. Enjoy!

this recipe loks great. However I don’t have a microwave – yes I know and everyone wonders how I survive. So what do you sugest for the mircowave step? survived

You can heat the milk, water and butter on the stove top with the same result. I think the point it heating it to the right temperature for the yeast.
