If you get your hands on some Meyer Lemons, I highly recommend this Meyer lemon pudding cake recipe. I found the recipe printed on the back of the lemon box, and to tell you the truth I was a little nervous to try it at first. Would it be good enough? Did I really want to use 3 lemons to make a recipe I had never tried before? Well, it was a tough choice, but I’m sure glad I did. This luscious lemon dessert was Da Bomb!
Ingredients
2-3 Meyer Lemons
3/4 cup Sugar
1/4 cup All-Purpose Flour
1/4 teaspoon Salt
3 large Eggs, separated
1 cup Milk at room temperature {I used 2%}
4 tablespoons Butter, melted and cooled
Directions
Preheat oven to 300 degrees, and butter a 8×8 baking dish.
Finely grate 2 teaspoons zest and then squeeze 1/3 cup juice from lemons; set aside.
Combine dry ingredients. Whisk together yolks, milk, butter, lemon zest and juice; add to flour mixture; whisk to combine.
Beat egg whites until soft peaks form. Stir 1/3 egg whites into batter to lighten; gently fold in remaining egg whites {batter will be thin}.
Pour into your prepared baking dish; bake until golden, 34-40 minutes. Serve warm or at room temperature. Recipe Credit

Yummm! My great grandmother had a meyer lemon tree and I’m so jealous of anyone else who has one! I think that’s going to be my goal this year…. I’m going to find and buy a meyer lemon tree to plant in my yard 🙂

I LOVE meyer lemon…and especially anything lemony for dessert. I WILL be making this. I might even add a lemon glaze to the top of the cake…why not, right?My little meyer lemon tree isn’t doing so great. Luckily, my aunt and uncle have a HUGE tree that produces all year round.

Yum! I am not a kitchen person but this sounded so good when I read it on your blog last January (1/26/12) that I made it (with some difficulty over the beaten egg whites, didn’t know what I was doing) but despite the problems my inexperience caused it was still very yummy and everyone at work loved it! =) Now I’m dying to try it again! =) gotta go find some lemons….
