Seriously. If I could stop by Mrs. HB’s place for dinner every night and be served up all the delicious meals she’s been making for her family lately, I totally would. I am constantly amazed at the recipes she chooses to make each week. They all look so yummy. And they taste even better too.
Before we started this whole getting a hold of your budget thing she was spending a lot more money at the grocery store and her {non existent} menu plan was totally lacking. Like most of us she was making the same 5 meals over and over again. But let me tell you Bob, she has come out of her shell and this recipe for pecan chicken was a total hit at her place. It left her peeps asking for seconds. And you should try it because the recipe is really pretty simple.
Ingredients
2 cups pecans, chopped
1/2 cup unsalted butter, melted {for the pecans}
4 – 6 boneless, small skinless chicken breasts
1 1/2 teaspoons cajun seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 teaspoon garlic powder
1/4 teaspoon nutmeg
6 tablespoons unsalted butter {for the chicken}
1/3 cup olive oil
2/3 cup brown sugar
2/3 cup maple syrup
Directions
Preheat oven to 250 degrees and lay pecans on a cookie sheet and drizzle melted butter over the top of them. Bake at 250 for 10-15 minutes until lightly toasted. Set aside.
Turn oven up to 375 degrees.
Season chicken breasts with cajun seasoning, salt, pepper, garlic powder and nutmeg. In a large skillet brown melt the butter with the olive oil and brown chicken on both sides {about 2-3 minutes per side}. Place chicken breasts in a baking dish and set aside.
Using the same skillet, combine the brown sugar and maple syrup and cook until the sugar melts {about 1 minute}. And the pecans, making sure to coat them with the mixture and then drizzle over chicken. Cover the baking dish with foil and cook at 375 degrees for about 20-30 minutes or until the chicken is cooked through.
Mrs. HB served this chicken dish with a side of sweet potatoes and biscuits.
This recipe was slightly adapted from Miss Kay’s Duck Commander Kitchen. She LOVES this cookbook and has tried several of the recipes from the book. Yes, there’s a lot of butta. But c’mon, all the best recipes do.

So basically, this is pecan pie with some chicken in it. Which I’m all for, don’t get me wrong. But a recipe like this would never show up on my rotation because it is so unhealthy. Over a cup of added sugar and fat. If I’m eating that much sugar and fat, I’ll just go straight for the pecan pie.

While I like the recipe, it’s out of my price range The pecans alone would cost me more than the chicken. I don’t mind the fat too much – it can be a splurge meal, but I don’t know if it wouldn’t be too sweet.
Kudos to Mrs. HB for trying new recipes. I have too many to think about and still cook the same old thing.
