I cannot believe it has taken me so long to try this recipe. Holy cow! These no bake chocolate peanut butter haystack cookies were so simple to make, I was finished before I even knew it.
The recipe below should yield 1 dozen haystack cookies. I doubled the recipe for a double batch, but next time, I think I might triple it. These sweet treats will go quick!
Ingredients
1 ½ cups chocolate chips
½ cup creamy peanut butter
3 cups Corn Flakes cereal
Directions
Place chocolate chips in a microwave-safe bowl and microwave for 30 seconds. Stir and then repeat this until the chocolate chips are smooth. Once the chocolate is smooth, add peanut butter and stir until the chocolate and peanut butter are nice and creamy. Carefully fold in the Corn Flakes until they are evenly coated.
Drop the mixture by the tablespoon on a parchment paper lined baking sheet and let them set. If it’s warm in your house, pop the cookie sheet into the refrigerator until the sweet treats have set. Store in an airtight container.

I’ve never made these with this recipe but we make a similar version that I bet you would love as well. Melt a bag of chocolate chips (semi-sweet or milk chocolate, your choice). Then stir in a bag of butterscotch chips. Mix that with a bag of chow mein noodles (LaChoy). Add noodles until it looks like they won’t blend with the chocolate anymore. Spoon onto wax paper and cool. they.are.delicious.
