How do you make these Nutella Cookies even better? Add hazelnuts of course! It’s no secret I’m a sucker for Nutella so clearly it was love at first bite. Not that I was even supposed to be biting because I didn’t make them for me. I made them to package up and give as a gift, so it took some serious willpower not to eat the entire tray!
Ingredients
2 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1 stick unsalted butter, softened
1 1/2 cups sugar
2 eggs
1 cup Nutella
1 tsp vanilla
Hazelnuts, finely chopped
Directions
In a medium mixing bowl, combine flour, cocoa powder, baking soda and salt. Set aside.
In a stand mixer, beat butter and sugar together on medium speed until fluffy {about 5 minutes}. Add one egg and turn on mixer to combine before adding the other egg. Add Nutella and vanilla and mix until combined.
Slowly add the flour mixture to the wet ingredient and beat just until combined. Place dough in air-tight container and refrigerate a minimum of 4 hours.
Preheat oven to 350 F. Line a large baking sheet with parchment paper {I use a Silpat. It’s the only way to go!}. Scoop cookie dough into balls {I used a 1 tablespoon cookie scoop}. Firmly roll in hazelnuts to get them to stick. Bake about 15 minutes or until edges are set. Enjoy!
