October 1st is National World Vegetarian Day, which is kind of an oxymoron, given that it is National and World all at once, but whateva, let’s just go with it. Living next to Francisco taught me a thing or two about vegetarianism: One, it is super satisfying when you have the right recipes. Two, it saves a bundle to cut meat out of the diet every so often. Three, reduced meat consumption has a huge impact on the overall health of the environment. Four, did I mention it’s delicious?
So, in celebration, let me send you on your way with a couple of random facts and some tried-and-loved recipes to get the day started. Did you know it takes 25 gallons of water to produce one pound of wheat and 2500 gallons of water to produce one pound of meat? I was kind of shocked by that one. Also, for giggles, did you know that the actor that played Ronald McDonald for all of those years is now vegetarian? Ah, one of life’s funny ironies. Finally, how about this little meatless nugget: The Greek philosopher, Phytharoras, was a vegetarian. In fact, before the term “vegetarianism” was coined, the principles of a meatless diet were known as the Phythagorean diet.
