I’ll be barbecuing some chicken for dinner tonight so I thought I’d whip up a little side dish to serve alongside and wowie zowie folks….this recipe for orzo pasta with green beans and parmesan is a keeper! I might have to make it again for lunch tomorrow because I can’t get enough of it!
Here’s the recipe:
Ingredients
2 cups cooked orzo pasta
3 tablespoons olive oil
8 ounces fresh green beans
1 small red onion, diced
1/4 cup packed spinach, chopped
1/2 cup cherry tomatoes, halved
1 teaspoon dried basil
1/4 cup almonds, chopped
1/4 cup parmesan cheese, grated
salt and pepper to taste
Directions
Place cooked orzo, parmesan cheese, basil and cherry tomatoes in a large bowl and set aside. In a medium sized skillet saute green beans and onions together with 1 tablespoon of olive oil until softened. Add spinach and chopped almonds and saute until the spinach has wilted and the almonds are lightly toasted.
Add the green bean mixture to the large bowl with orzo and toss with the remaining olive oil. This can be served warm or cold. Enjoy!
