A big thank you to everyone who left me a comment on facebook this morning about what to do with all those watermelons. I took your advice, and currently have a batch of watermelon in the dehydrator. Eeek! To be completely honest, I’m kind of scared. But hey, nothing ventured, nothing gained right?
But first, I want to share with everyone what I made for lunch today. As soon as I read Helen’s suggestion to make a watermelon, feta and green onion salad, I remembered a recipe I had dog-eared in one of my new favorite cookbooks, 500 Salads by Susannah Blake. I bought the book a few months ago because of all of the amazingly simple salads, and today I was able to make another one of them. If you are a salad freak like me, you might want to pick it up, or check it out from your local library, asap.
Here is my slightly adapted version of the recipe.

Ingredients
2 cups watermelon chunks
1 small red onion, sliced thin
2 tablespoons feta cheese crumbles
2 teaspoons balsamic vinegar
1/4 teaspoon fresh ground pepper
Directions
Toss watermelon and red onion slices in balsamic vinegar and ground pepper. Place salad on plate and sprinkle with feta crumbles.
