My friend Amberlina is making me a little crazy with all her new Instant Pot recipes. Have I mentioned how much she loves her Instant Pot? I have? Well it’s true. She thinks it’s the best thing on earth. She whipped up some pork carnitas the other night in record time and the meat was out of this world good she wanted me to tell you about it.
Her meat-lovin’ hubby, who is so picky about his meat because he’s a meat smoking master, loved them. Her kids loved them, too. And Amberlina loved how little time they took {they take HOURS when you smoke them!}. Overall, she says, the recipe is a keeper!

Instant Pot Pork Carnitas
Ingredients
- 2 1/2 pounds trimmed , boneless pork shoulder blade roast
- 2 teaspoons salt
- 1 teaspoon pepper
- 6 cloves garlic , chopped
- 1 1/2 teaspoons cumin
- 1/2 teaspoon sazon {you can make your own or omit}
- 1/2 teaspoon dry oregano
- 3/4 cup chicken broth
- 2 to 3 chipotle peppers in adobo sauce
- 2 bay leaves
- 1/2 teaspoon garlic powder
- Taco fixins {tortillas , cheese, guacamole, sour cream, etc.}
Instructions

Season pork with salt and pepper. Hit the saute function and allow the pot to heat. Drizzle a little olive oil in pan and brown pork on all sides. Remove from pot and allow to cool.

Using a sharp knife, insert blade into pork about 1-inch deep, and insert some of the garlic cloves. Repeat the process all over the meat. Season pork with cumin, sazon, oregano, and garlic powder all over.

Pour chicken broth into the pot, add chipotle peppers and stir. Add the bay leaves and place pork on top. Set the IP on manual for 50 minutes on high pressure. When the pressure releases, remove bay leaves, shred pork using two forks and combine well with the juices at the bottom.

Happy {belated} Mothers Day to all the mothers out there! I had a great day so nice and lazy that I didn’t want to write my post for Ms Mavis. But she convinced me that ya’ll would hate not seeing my post. Lol… So here it goes.
Do you remember the soda cans that we started collecting, I think in February? Well the box was overflowing so I thought it was time to take to the Puget sound recycling place. It’s off 512 for those who live around here. I was kind curious as to how much the haul would bring. I thought maybe 6 or so dollars. LOL! I had 12 pounds of aluminum cans and received wait for it……. a whooping $3.60!!!
That’s all! Now I figured I lost money on this gig, ya think? With the gas to get there, about 23 miles plus the toll bridge toll of $5, you can do the math. Not a wise investment. But I satisfied my curiosity. A guy there actually joked and said,” now you can buy a whopper”. I said, “without cheese!”
I forgot to take pictures of my grocery trip but had planned to make meat spaghetti,
HB boy and hubby were trying to throw me off by wanting an unhealthy cheesy chicken casserole but I found one that is at least a healthier option. I added mushrooms and water chestnuts. With the broccoli, brown rice and low-fat cheese I think it was ” healthier” and what do you know they loved it! The trick is not to tell them. Sneaky sneaky. 😉
I think I am almost there but HB Hubby was afraid that with my slushy fund purchases I was going back to my old ways. But I am not. Believe me there were many things I picked up and put back down. The questions I now ask myself are: Do I need this or want it? Where would I put it? Would it replace something or just be more clutter? Am I willing to spend my cash for it? Is it worth it ? Do I have others like it?



As I mentioned yesterday I snagged a last minute deal and hopped a flight to Hawaii to hang out with my parents for Mother’s day. My parents LOVE to go out to restaurants and so they’ve been treating me to their favorite hot spots everyday.
