Yesterday we fired up the BBQ and cooked some delicious peach ginger glazed chicken thighs. Normally I just use Zaycon chicken breasts when we BBQ but I was able to pick up some chicken thighs for a great price at Albertsons.
I don’t know why, but everything seems to taste better on the BBQ. This recipe is no exception.
Peach Ginger Glazed Grilled Chicken
Ingredients
- 6 – 8 chicken thighs
- 1 cup peach jam
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon dried ginger
- 1 teaspoon garlic , minced
- 1 teaspoon sesame seeds
Instructions

In a large bowl mix together all the ingredients except the chicken. Place chicken thighs in a shallow pan and pour the marinade over the chicken. Turn to coat.

Refrigerate for 2-3 hours.

Remove from marinade and cook over a medium hot grill until fully cooked {about 6 to 8 minutes on each side}.

i don’t have peach jam, but do have apricot. Think it would work with apricot?
