I love me some waffles and not just because they are delicious. Waffles are also so easy to make from scratch even The HH can do it! They’re right up there with scrambled eggs. Plus, it’s so easy to add a few ingredients and really change a waffle recipe. These pumpkin spice waffles hit the spot and were a total hit with the whole fam. I’m adding this recipe to my favorite brunch recipes for sure.
Ingredients
2 cups flour
1/4 cup sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon ginger
1 teaspoon nutmeg
1/2 teaspoon baking soda
3 eggs
1 1/2 cups milk
3/4 cup canned pumpkin puree {How to make pumpkin puree}
2 tablespoons butter, melted
1/2 cup toasted pecans, chopped {optional}
Directions
In a large mixing bowl, combine first 7 dry ingredients up to the eggs. In a separate bowl, whisk together eggs, pumpkin, milk, and butter. Combine wet and dry ingredients and stir just until combined. Your batter will be lumpy but don’t over mix to smooth the lumps. Cook waffles in a preheated and greased waffle iron until golden. Serve hot with the toasted pecans and syrup or the toppings of your choice.
