This was the easiest pasta salad I have ever made. The broccoli, peas and spinach came from my garden, I picked up the pasta last week for free, I scored the Ranch packet last year and the sour cream, well that was free to with my Costco Rebate Check.
Wahoooo! Living on the edge is fun baby!
I’ve already had one bowl of this Ranch Pasta Salad for lunch, let’s hope just hope there will be enough left over when for dinner tonight! Yumm-O!
Ingredients
16 oz dry pasta {I used mini penne}
2 cups fresh broccoli, chopped
1 cup fresh or frozen peas {I used frozen}
1 cup fresh spinach, chopped
1 packed Ranch dressing, prepared as directed
Directions
Cook the pasta according to directions on the box, drain, and set aside to cool.
Mix up the Ranch dressing according to the package directions and set aside.
In a large serving bowl, combine the pasta, broccoli, peas, and spinach. Pour the Ranch dressing over the pasta and stir until all the pasta is coated. Refrigerate until ready to serve.

Looks good but would definitely file it away as a summer recipe. Too cold here now, we like hot foods now.

Looks like it would be good warm!

It’s summer when I found this! I love trying new salads at our family dinner on Sundays when our grown kids and grandkids visit!
I think this might call for some real bacon bits!
