I cannot remember a year when I have grown such a variety of lettuce. The other day as I was harvesting the remaining greens from my very first lettuce pallet, I suddenly had a craving for bbq chicken. So I thought, hey why not combine the two. After all, people make Chicken Cesar salad all the time, right? Why not try a bbq chicken salad instead?
Oh snap was it good. The Handsome Husband even liked it too.
Here is the recipe.
Ingredients
- 4 oz Mixed Salad Greens
- 1/4 cup Dried Cranberries
- 1/8 cup Toasted Pecans, chopped
- 1/2 Fuji Apple, sliced thin
- 1/2 BBQ Chicken Breast, sliced
- 2 tablespoons Ken’s Raspberry Pecan Salad Dressing
Directions
Fill a large bowl with mixed salad greens {preferably home grown}, rinse and pat dry with a paper towel or run it through a salad spinner. Arrange salad on dinner plate, add chicken, cranberries, apples and pecans. Add salad dressing and dig in!
