My original plan for today was to dig up the strawberry plants and move them to their new bed alongside the house. Buy holy cow, when I stepped outside this morning it was 36 degrees out! I think if it’s going to be that cold it needs to snow. I’m beginning to think there will be no snow at all this year. Boo!
Anyway, I decided the best thing to do today was stay home, build a fire and make a giant pot of chicken soup.
Ingredients
3 quarts chicken broth
2 chicken breasts, cooked and chopped
1 12 oz box bow tie noodles, cooked
1 can corn kernels, drained
1 chopped carrot
3 slightly under baked potatoes, cubed
1 tablespoon Italian seasoning
salt and pepper to taste
Bring chicken broth to a boil, add carrots and seasoning, reduce heat and let simmer 10 minutes. Add corn, potatoes, chicken, noodles and cook 2 minutes longer. Serve warm with crusty bread and butter.
