This afternoon I whipped up a batch of mint chocolate chip ice cream. According to Monkey Boy, it was the best ice cream he had ever tasted. But he’s a boy, who loves Doritos… so can he be trusted? Hmmm.
I think so.
In fact I’ll even go on record to tell you this was the easiest batch of ice cream I have ever made in my entire life. Ever! Want to know why? No Eggs. Seriously, who knew ice cream could be made without eggs? Not me. I think this batch of mint chocolate chip ice cream took about 5 whole minutes to make. Well, minus the time it took to churn itself in the ice cream maker.
If you have all the ingredients on hand, you should make this tonight for dessert.
Ingredients
2 cups milk {I used 2%}
2 cups heavy cream
1 cup sugar
1/2 teaspoon salt
1 teaspoon peppermint extract
1 teaspoon vanilla extract
5 drops green food coloring
3 oz chocolate {I used semi-sweet}
Directions
Add all ingredients in a large bowl and stir well. Pour into your ice cream maker and freeze according to the directions on your ice cream maker. While the ice cream is churning, melt 3 oz chocolate in a double broiler. Once the chocolate has melted, carefully pour it into a squeezy bottle. Drizzle the bottom of your ice cream container with about half of the melted chocolate. Once the ice cream is ready, pour half of the ice cream in to the ice cream container. Drizzle with chocolate. Add the rest of the ice cream, and drizzle the remaining chocolate sauce over the ice cream.
Place the ice cream in the freezer for a few hours to ripen and to harden a bit.
Serve alone, or with chocolate chip cookies if you have them.

Robin, I have the old fashioned wooden hand crank ice cream maker that I pull out for parties and I also have the kitchen aid ice cream bowl attachment. I use the kitchen aid one all the time and store it in the freezer when it’s not in use.

Been gathering all the ice cream recipes I can find in hopeful expctations of our Jersey cow Joy’s upcoming birthing. Been a few years since we wallowed in milk and cream! This sounds absolutely delicious…maybe I’ll have a new favorite ice cream besides homemade strawberry. Best part of homemade is none of those ingredients you can’t pronounce.

I want to share and awesome recipe from my Grandma…..for mint chip pie……melt a bag of choc chips-add rice krispies till well coated-freeze and before serving add the ice cream…always a fave…..and another wonderful reason for monkey boy/the family to enjoy mint chip ice cream……

Got an Ice Cream maker attachment for my Kitchen Aid for Christmas! So I tried this recipe for New Years…. modified for my husband: I left out the chocolate, and added crushed candy canes. Very yummy! The candy canes really needed to soften up more. Not sure if I should make up the ‘batter’ ahead and soak the crushed candy in it? Or make the whole batch ahead and freeze it for a few days. Thoughts?
Do you always make your ice cream right when you’re going to serve it? Do you ever make it ahead to have in the freezer? Any idea how long it will keep?

I usually make the ice cream ahead of time and stick it in the freezer for a few hours before serving so it harden up a bit. I’d say fresh Ice cream should be consumed with 1 week for the best flavor.
