A muffin is the one of my favorite breakfast foods to make and to eat. I love making them because they are simple and rarely too time consuming. For the most part you just dump all ingredients together and then stir them up. Easy peasy {and great kid-friendly recipe for new chefs!}. I love your muffin recipes and several of them are in our regular rotation! I think I’ve made all but 3 of them and if I had any pears I would be jumping up to make those now!

One time I wanted to make the bigger muffins, like you would get from Sam’s Club. I was having chicken salad and used a can of chicken breast. So, I washed out that tin and used it for my muffin. Worked out great! perfect size for breakfast or a cornbread lunch muffin. Now I keep a supply of those tins in with my regular pans for when I want to make muffins. You can get 3 or 4 muffins out of a regular cake recipe. It is so much easier to transport than a regular slice of cake. Just easier all around and just as yummy. I will be trying one of these recipes soon.
