I haven’t done that, because I don’t grow zucchini! I hate the stuff. Oh, hidden in brownies or in zucchini bread it would be fine. I think anything in that kind of bread pretty much tastes the same. Banana bread. Zucchini bread. Applesauce bread. Persimmon bread. Although, I am not so sure about the brownies! The photo of the green goop going in puts me off!
The only reason I grow squash is to mash it and turn it into puree to freeze for muffins, cakes, pies, and cookies! This year most of my squash actually came up in the compost heap on their own.

My mom taught me to put a little cocoa in the bread to make it choc zucchini bread. Delish. I add some of it grated and drained to potato pancakes. ๐

You forgot dehydrated zucchini chips!!! Slice, dry and eat warm with salt sprinkled on or bag them for soups in the winter. YUM.
