The first time I made this recipe, I never thought to turn it into a freezer meal. But when I picked up my 40lbs of Zaycon chicken, I was trying to think of recipes my family loves that would make great chicken freezer meals. I knew this one would be a hit. So I whipped a bunch up in bulk and popped them in the freezer. They’ll make for a warm, chunky chili on a cold winter day. Yum!
6 slices bacon, cooked and chopped
1 pound of shredded, cooked chicken breast
1 large onion, diced
1 can red beans, drained and rinsed
1 cup crushed pineapple
1 cup brown sugar, gently packed
1 quart of tomato sauce
1 tablespoon brown spicy mustard
1 tablespoon Worcestershire sauce
1 tablespoon of vinegar
Directions
Throw all ingredients into freezer bags. Seal, label and freeze.
To cook after freezing, dump all ingredients into a large pot. Add 1- 2 cups of water {depending on desired thickness} and heat to boiling. Simmer for 30 minutes or until bacon is cooked through. Enjoy!
