So. This whole cooking for one thing… I haven’t really figured that out yet. 😉 It took me 3 1/2 days to finish the quiche I made last week and as many days to finish the ham and bean soup. I suppose I could have frozen the extra portions but I don’t have any storage containers here.
The Eating Local Challenge is going well, but I didn’t buy much this past week because I still had a bunch of veggies to use up from the previous week. I plan on making a pan of roasted beets and sweet potatoes for dinner tonight and maybe a french toast {or rather a leftover bread} casserole for tomorrow.
I also picked up The Girl and surprised her with a mini weekend adventure to Burlington, Vermont where we spent a whopping $36.99 on a half gallon of real maple syrup and $6 on a loaf of bread at the local Farmer’s Market. Lucy came along and had a blast in the big city with us.
