If you are looking for a simple side dish or something to pack in your lunch this summer… you should totally try this easy peasy recipe for tabbouleh. I found the recipe on the back of a package of Bob’s Red Mill Bulgur and decided to give it a try using a few extra ingredients I had on hand. Let’s just say, I was not disappointed. 😉 In fact I ate the entire bowl of salad all by myself over the course of a few days.
Ingredients
1 cup bulgur
1 cup boiling water
2 cups finely chopped fresh parsley
1/4 cup finely chopped mint
1/4 minced green onions
1 carrot, chopped
1 cup packed spinach, chopped
2 tomatoes, diced
1 cucumber, diced
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
3 tablespoons lemon juice
3 tablespoons olive oil
Directions
Combine bulgur and boiling water in soak for 1 hour. Drain well and squeeze out any excess water. In a large bowl combine all the ingredients and chill in the refrigerator for a few hours before serving.
