I’m totally preparing for Thanksgiving this year so on the big day, I’m not fumbling around the kitchen like a mad woman. Okay so there will still be some of that, but I’m trying to tone it down with cooking a bit the night before and using my crockpot.
Of course you have to have mashed potatoes on Thanksgiving. The HH and Monkey Boy would riot if I didn’t. So this way I just set it & forget it while I have 6-8 hours to cook everything else. Perfect.
Ingredients
5 pounds of potatoes, peeled and cubed
1 1/2 cups chicken broth
3 tablespoons butter
2 cloves minced garlic
1 cup sour cream
4 ounces of softened cream cheese
4 pieces of cooked bacon, crumbled
2 tablespoons fresh chives
Directions
Place potatoes, broth, butter and garlic in a slow cooker. Cook on low for 6 hours.
Test the potatoes with a fork, and if soft, add cream cheese and sour cream. Mash to desired consistency with a potato masher. Garnish with bacon and chives, and serve hot.

Mavis saves the day again! I love, love, love mashed potatoes…but I rarely make them because dinner time is NOT the time of day when I can afford the time to peel and dice enough potatoes to boil for a family of 6, going on 7. BUT….if I could do it earlier in the day and do the cooking in the crockpot?! Mashed potatoes are back on the menu again. Thank you!

Love this idea. Now do you have a good make-ahead gravy recipe? Gravy always intimidates me on Thanksgiving, would love a way to make that easier!

1) MASHED POTATOES IN A SLOW COOKER! Absolutely brilliant!
2) Skip peeling the potatoes. Most of the vitamins and minerals are close to the skin and most of us can use the fiber. For diabetics, I at least suspect that fiber held helps lower the glycemic load compared to peeled potatoes.
3) Potatoes with milk contain most of the nutrients needed to sustain humans. So, without being its own food group, mashed potatoes can nearly be a meal… Stir in greens for Irish “comfort food.”
Maybe make the gravy ands mashed potatoes, put each in a bago or suitable container, place these in crock pot to keep warm. A water bath may be needed. YMMV!

1) Did the potatoes oxidize/discolor at all while they cooked?
2) How much does this recipe yield? Enough for 12 people?
