I made a pot roast for dinner a while back and shockingly there were a bunch of leftovers so I whipped up a pot roast soup in the crock pot. I mean really, we all know pot roast taste better on the second day, right?ย The HH had 3 bowls it was so good. ๐ Yep, it’s a keeper for sure.
Ingredients
1 -2 pounds left over pot roast, cooked and cubed
8 cups beef broth
1 14 oz can diced tomatoes with green chilis
1/2 cup dried pinto beans, washed
1/2 cup dried white navy beans, washed
1 carrot, chopped
1 onion, chopped
2 stalks of celery, chopped
1 teaspoon dried oregano
2 teaspoons pepper
1 tablespoon dried parsley
Directions
Toss everything in the crock pot and cook on low for 8 hours or high for 4 hours. Serve with some crust bread and you’re good to go.

My HH loves leftovers… I never have to fix breakfast or lunch for him. He just puts a plate in the convection over, crisps it up and eats it. I’d have to make one honkin’ big pot roast and hide half of it from him to be able to serve it to him again in the form of soup. (He works from home so is always messing in the kitchen.)

Mavis I just wanted to say that I read a LOT of recipes on different sites and I have been noticing lately that you tend to put 1-2 pictures up, a small explanation of the recipe and then the recipe and I LOVE it! So many sites that I look at they have step by step pictures of them making the recipe and it’s difficult for me to sift through them to find the meat and potatoes of the recipe. In the last few weeks I suddenly noticed this about your site and it is really refreshing to see a blogger share recipes in such a simple and clear way . Your recipes are also amazing, so double bonus for me!

What leftovers??? I make only PlannedOvers. Second day is always the best with meat dishes.
Love pictures too. I don’t make any recipe unless I can see it first.
