Looking for something to toss in the crock pot this weekend? This recipe for slow cooker Quinoa Chicken Chili is out of this world delicious. And it’s filling too.
I made it for the HH the other night and he liked it so much, I’m making another batch so he can bring some to work for lunch. This recipe rocks!
Ingredients
2 large boneless skinless chicken breasts {I use Zaycon chicken}
2 {14.5 ounce} cans of diced tomatoes
1 {15 ounce} can of black beans, rinsed and drained
1 (15 ounce} can of pinto beans, rinsed and drained
2 cups frozen corn
3 cups chicken broth
2 teaspoons cloves garlic, minced
1 medium onion, chopped
2 teaspoons cumin
1/2 teaspoon red pepper flakes
2 teaspoons chili powder
1 cup of quinoa, rinsed
Instructions
Place all your ingredients in a slow cooker, stir and cook on low for 8 hours or high for 4 hours. Right before you serve, remove the chicken from the slow cooker, and shred it with two forks. Place it back in the slow cooker for a few minutes before serving.
Top with sour cream, guacamole or shredded cheese. Yum-O!

Holy Crack in a Crock-pot this is divine! Made it with my Zaycon chicken and with RoTel diced tomatoes with green chiles. Good amount of heat and thick stick to your ribs meal. Thanks for sharing it!
