If you’re planning a Super Bowl party but are tired of the same old potato skins appetizer, you’ll love this recipe. It’s just as tasty and still uses potatoes but with way less grease! Without sounding sexist, I’d say it caters to all the women who are more than likely at your Super Bowl party to chat and snack and NOT watch football.
I mean I can’t even name 5 NFL teams, much less tell you who’s playing for the championship? {cup? trophy? What do they win?}ย But I can certainly tell you what would be on my menu, and these smashed potatoes are totally there.
Ingredients
12 whole new potatoes
6 slices of bacon, cooked and chopped into bits
Olive oil
Butter
Salt and pepper to taste
1/2 teaspoon dried thyme
Sour cream
Chives
Directions
Preheat oven to 450 F. Coat a baking sheet with a generous amount of olive oil and set aside. Add potatoes to a large pot of boiling salt water. Boil just until tender {fork slides into potato without resistance}.
Dump potatoes onto prepared baking sheet, making sure potatoes don’t touch. Gently press down on each potato with a potato masher until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with butter or olive oil, then sprinkle with bacon, salt and pepper.
Bake 20-25 minutes until golden. Top with sour cream and chives and serve hot!

Mavis, these look wonderful. Will have to give them a try. I know a lot of women don’t know or care about football but I am not one of them!!! I love, love, love it. And right now the only team you need to know the name of is the fantastic Seattle Seahawks!!!

The team gets the Lombardie trophy, but don’t the winning players received huge gaudy rings with diamonds and greek numbers for the year they won? I love the commercials and the excuse to eat great junk food while acting interested.

I just made these and added a sprinkle of canned, fried onion before putting them in the oven. Yum!
