It doesn’t really matter what I do or what recipe I throw them in or how I season them, I can never make peas an exciting dish. I mean they’re fine, but fine is all they really ever are. Until now.
When I saw this pea recipe, the addition of lime and cilantro threw me off at first. But I decided to give it a whirl anyway. So glad I did. I just made peas exciting. Yep. That happened.
Ingredients
2 cups of fresh shelled or frozen peas
2 tablespoons olive oil
1/2 teaspoon kosher salt
2 cloves garlic, minced
1/2-1 teaspoon curry powder {depending on your preference}
1/2 cup fresh cilantro leaves
1 teaspoon fresh lime juice
Directions
In a medium skillet over medium heat, saute the peas, salt, garlic, and curry powder in the olive oil, stirring occasionally, about 5 minutes {longer if frozen}. Remove from heat and add the cilantro and lime juice, and toss to combine.
