I totally had to try this spinach salad after reading the ingredients: it’s served with a warm bacon dressing. Warm. Bacon. Dressing. People! Of course I would make this and of course it rocked my socks off. So if you’re searching for that perfect dish to serve at your next BBQ, this is one your family and your guests will be talking about for days.
Ingredients
6 hard-boiled eggs, sliced
1 pound bacon, cooked and roughly chopped {reserve 2 tablespoons grease}
5-6 cups {about one 10 oz bag} fresh baby spinach
1 small red onion, {half chopped and half thinly sliced, divided}
1/2 cup white wine or balsamic vinegar
1/2 cup white sugar
2 teaspoons Dijon mustard
1/4 cup water
Directions
Layer spinach, sliced onion, eggs and bacon in large bowl and set aside.
In the same skillet you cooked your bacon in, heat reserved grease. Sauté the chopped onion for about five minutes, or until tender. Pour the white balsamic vinegar into the pan and scrape bottom to lift any bacon bits off bottom. Add sugar, mustard and water, and stir until well combined. Pour over salad and serve. Enjoy.

Yum!!! I made a dressing like this for a BLT panzanella salad once, it was the first time I saw my husband have any enthusiasm over a salad, haha! I’ll have to try adding the eggs next time.

This sounds delicious. I don’t have sugar so I will try substituting some Vermont maple syrup in the dressing. Tonight’s dinner-solved!
