I can’t think of a better thrill on a summer’s day, than walking down to the vegetable garden to pull up a few vegetables for dinner. A quiche? A simple soup? A stir fry? The possibilities are endless, and it gives me time to slow down, enjoy the process and to reflect on how uncomplicated life really can be, if we’d just all unplug a little from all the {seemingly} go go go demands of everyday life.
Resisting the urge to run to the store for that one missing ingredient is really one of the greatest things you can do for yourself. Make do with what you have hand, keep it simple. Slow down. Enjoy the meal.
Ingredients
4-6 turnips, chopped into 1″ bits
2 carrots, chopped
2 tablespoons olive oil
3 cups Swiss chard, chopped
1 heaping teaspoon garlic, chopped
2 cooked sausages, chopped
1 heaping tablespoon chicken base
1 can navy beans, drained
salt and pepper
6 – 8 cups of water
Directions
Saute chopped turnips and carrots in olive oil over medium heat. Add Swiss chard and saute a few minutes until the leaves have cooked down. Add chopped garlic and sausage, saute 3 minutes. Add chicken base, beans, water and salt and pepper. Cook for 20 – 30 minutes over low heat. Serve with crackers or crusty bread.
