Bacon wrapped water chestnuts baby! Did you know you can make a simple sweet and sour sauce out of ketchup and sugar? Oh yes you can. My family has been making bacon wrapped water chestnuts ever since I can remember.
Don’t hate me if you eat 10 of them before you even get them to the table. These are tasty. Consider yourself warned.
Ingredients
12 oz bacon, sliced into thirds
2 8oz cans whole water chestnuts, drained
1 cup ketchup
1/2 sugar
Directions
Preheat oven to 375 degrees.
Slice the bacon into thirds and wrap it around the whole water chestnuts. Spear with a toothpick. Bake in a grill pan {or a pan with a rack} for 20-25 minutes until the bacon is cooked but not too crispy.
While the bacon wrapped water chestnuts are cooking in the oven, simmer the ketchup and sugar on low for 20 minutes, stirring frequently.
When the water chestnuts are finished cooking, place them on a paper towel to drain. Dip each each bacon water chestnut in the sauce and serve warm.

When I was a kid this was a staple snack, like a PBJ for us. I used to think everyone had this after school and on weekends. Also as a kid for breakfast we would always have miso soup with tofu and rice. To each their own!

I usually soak my water chestnuts in teriyaki sauce for about an hour before I wrap them with the bacon. They are super yummy!!

A bit of pineapple juice, left over from the canned chunks, would really make it taste like sweet and sour sauce.

I make a real easy sweet & sour, too. a Bottle of chili sauce, and a can of cranberry jelly. Just whisk and heat. Very good!
