I’ve had {and loved} all sorts of cranberry cookies and I’ve had {and loved} all sorts of white chocolate chip cookies. This is the first time I’ve combined them and I have no idea why I waited this long. It’s like magic in a cookie. All of the best things in a cookie colliding. They were tasty. I’d highly recommend you whip up a batch or two.
Ingredients
1 1/2 sticks {12 tablespoons} unsalted butter, softened
1 cup sugar
1 cup dried cranberries {I used sweetened}
1 large egg
2 tablespoon orange juice
2 teaspoons vanilla extract
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon salt
1 2/3 cups flour
1 {11 oz} bag white chocolate chips
Directions
Preheat oven to 350 degrees. Line baking sheets with parchment paper or use silpats.
In a large bowl, mix butter and sugar until fully combined, mashing out any lumps if necessary. Stir in the dried cranberries, egg, orange juice, vanilla, baking powder, cinnamon, ginger, and salt until smooth. Stir in flour and chips. Carefully fold in the cranberries and fully incorporate. If the dough is too crumbly and won’t hold together, you can add a teaspoon or two of milk.
Drop 1-1.5 tablespoon-size balls of dough about 2 1/2 inches apart on the prepared baking sheets. Bake 10 to 13 minutes or until the cookies are almost almost firm when pressed in the middle. Cool completely on wire racks. Gobble up!
