Have you ever used cranberry beans in a recipe? I know they aren’t all that common, but man oh man let me tell you they make a mighty fine soup. They have a rich chestnut flavor that I love. I gifted some cranberry beans a while back and threw some ingredients into a crock pot last night for one freakin awesome soup. If this is your first time using cranberry beans, let it be in this recipe!!
Ingredients
1-2 boneless chicken breasts, cooked and shredded
1 medium onion, chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried cilantro
4 garlic cloves, minced
1 cup dried cranberry beans soaked overnight
4 cups chicken broth
Toss everything into the crock pot. Cook on low for 4 to 6 hours. Easy peasy. Serve warm with a nice hunk of bread and butter.
