This afternoon I whipped up a batch of mint chocolate chip ice cream. According to Monkey Boy, it was the best ice cream he had ever tasted. But he’s a boy, who loves Doritos… so can he be trusted? Hmmm.
I think so.
In fact I’ll even go on record to tell you this was the easiest batch of ice cream I have ever made in my entire life. Ever! Want to know why? No Eggs. Seriously, who knew ice cream could be made without eggs? Not me. I think this batch of mint chocolate chip ice cream took about 5 whole minutes to make. Well, minus the time it took to churn itself in the ice cream maker.
If you have all the ingredients on hand, you should make this tonight for dessert.
Ingredients
2 cups milk {I used 2%}
2 cups heavy cream
1 cup sugar
1/2 teaspoon salt
1 teaspoon peppermint extract
1 teaspoon vanilla extract
5 drops green food coloring
3 oz chocolate {I used semi-sweet}
Directions
Add all ingredients in a large bowl and stir well. Pour into your ice cream maker and freeze according to the directions on your ice cream maker. While the ice cream is churning, melt 3 oz chocolate in a double broiler. Once the chocolate has melted, carefully pour it into a squeezy bottle. Drizzle the bottom of your ice cream container with about half of the melted chocolate. Once the ice cream is ready, pour half of the ice cream in to the ice cream container. Drizzle with chocolate. Add the rest of the ice cream, and drizzle the remaining chocolate sauce over the ice cream.
Place the ice cream in the freezer for a few hours to ripen and to harden a bit.
Serve alone, or with chocolate chip cookies if you have them.
